Petra "Petee" Paredez is a pastry chef, cookbook author, and the head baker and co-owner of Petee's Pie Company, one of New York City's most acclaimed pie shops. A second-generation pie baker, she grew up learning the craft at her family's bakery in Virginia before bringing her own approach to New York, where Petee's Pie Company opened on the Lower East Side in 2014. In 2018, she expanded with Petee's Café in Brooklyn, featuring cocktails, natural wines, and savory pies. Paredez is the author of Pie for Everyone: Recipes and Stories from Petee's Pie, New York's Best Pie Shop.
